"Lamb with spinach"
1/2kg fresh spinach (trimmed and washed)
4 tablespoons oil
1 onion (peeled and sliced)
1/2 kg boneless lamb (cut into small cubes)
1 teaspoon giner/garlic mixture
2 tablespoons curry powder
1/2 teaspoon chilli powder
1 teaspoon cumin powder
1/2 teaspoon turmeric powder
4 fresh tomatoes (skinned and chopped)
Put the spinach in a saucepan with some boiling water. Cook for 10 minutes, then strained, chop and keep aside.
Heat oil in a large pan and fry the sliced onion and meat for about 5 minutes. Then add the ginger/garlic mixture, the powdered ingredients and about 2 tablespoons of water and stir-fry gently for about 2 minutes.
Next add the tomatoes and salt. Continue frying gently for 10 -15 minutes until the oil separates and rises to the surface.
Add some water (about a glass), cover and simmer till meat is cooked.
Then add spinach and some more salt. Stir well, cover and cook till spinach is nicely pureed.
Serve hot with rice and chutneys.
