"Salted Fish Rougaille"
Clean fish and allow to soak for about half an hour in cold water.
Then cut into smal pieces.
Heat oil and fty fish pieces well until brown. Remove and keep aside.
In the same oil, fry the oinion for a minute, then add all other ingredients (except shallot) and a little salt. Cook until mixture thickens and a thick gravy is obtained.
Add to the rougaille, the fish pieces and 2 or 3 tablespoons water. Allow to simmer for 2 mins more. Remove from heat. Sprinkle over the chopped shallot.
